Hyper-Nourishment: Marinated Salads

Have you ever needed a meal ready, right away, and had to scramble to get something together hoping children didn't explode... or worse, while you yourself were already melting down from destabilized blood sugar?

Planning ahead takes a little time, and a little effort.  But being prepared often takes a lot less time and effort than those last-minute scrambles.  And it almost always costs less to feed yourself, or a household.

Marinated salads are one of my favourite ways to plan ahead, to have almost-ready meals that require only a toss with a few other fresh somethings (fresh greens, proteins) to be ready to eat.  Some of them, I can even freeze to save for a really busy stretch.

This double-sided cheat sheet give you ratios, principles, and a few sample recipes to give you ideas.  If you're at all creative, you can run with just this, but if cooking stumps you, just look up marinated salads online, and adapt the recipes to fit the principle of GAPS.

Once you start building these salads into your meal planning, you'll never be stuck scrambling to feed an upset, hungry child -- or self -- again.
